No, I don't think it could. The big reason is what you already said. There isn't enough of a market for American football outside of the US and Canada. I don't know if Mexico has a league, but they might and the UK side I'm unaware of. I just don't see it being popular enough for the olympics.

That seems to be the trend here. I would say Baker Mayfield for his first time, but he needs to prove he belongs before he can get into a pro bowl.

Will he play his best, I don't think so. But he will play the best he can. He may not be the young OBJ anymore, but he is still highly capable of playing this position.
